The Londoners Fish Tacos



If you're looking for a simple summer supper The Londoner's fish tacos are a perfect choice. Bring the beach to the table with fresh flavours, good quality ingredients and most importantly full tummies. Fish, guacamole, salsa yumminess. 


Shopping list (to serve 2):

4 fillets of white fish 
Coriander
Garlic
2 limes
Rock salt 
1 avocado
1 red onion 
Watercress
Cherry tomatoes
Tortilla wraps

For the fish:
4 small fillets of white fish, cut into inch wide strips
A handful of coriander
6 tbl spoons of olive oil
2 cloves garlic
1 lime, juiced
A large pinch of salt 
A good glug of olive oil

For the guac:
1 avocado
A small red onion 
1/2 lime, juiced
A handful of coriander
6 cherry tomatoes 
A big pinch of salt 

For the sauce:
A few dollups of creme fraiche 
4 tbs hot sauce 
A squeeze of lime 


Start with the fish marinade. Using a pestle and mortar, crush the coriander, garlic, lime, salt, olive oil and mix gently. Cover the fish strips with the marinade and leave them to stand and infuse. 


For the guacamole, mush an avocado, add finely chopped tomatoes, onion, lime juice and mix. Season well and try to resist eating it out of the bowl, I know its good. 


Pop a pan on to heat and once hot add the fish. Leave to cook for a few minutes while you make your taco sauce by mixing creme fraiche, lime juice and hot sauce. Flip your fish and cook for a few more minutes. Then the fun really starts! 


Let everyone build their own wraps. This is a messy one and attempting to eat it delicately is all part of the fun! Start with the wrap, add guac, the fish, sauce, watercress and a good squeeze of lime juice. Eat.  Enjoy. Make another. Keep going until you feel like you're about to burst and revel in your creation!
